Slow Cooker Buffalo Chicken Chili

Lemon Pepper Pork Chops were for Mom, THIS was for Dad.

I mentioned that I spent some time this winter in Florida and this was another recipe that Mom and I tested out together. She chose Pork Chops, Pulled Pork and we decided we should pick one out that my Dad would like.

He LOVES anything spicy, he is a super picky eater and really just puts ANYTHING over white rice with ketchup on it.

But, buffalo chicken…right up his ally.

This was the BOMB. Now, THIS I will make again, so I remember why I kept the link saved for so long and why I wanted to blog about it.

The flavors were awesome, the ingredients were fun, I never worked with a white bean before, other than Garbanzo/ chickpea so this was nice. I had made Chili, of course, but not a white chili. I can’t say enough, definitely worth making again!

And I mean, can you go wrong with a ton of cream cheese and hot sauce? I think NOT!

Dad liked it too.
