Adventure #56: Chocolate Coconut Balls


I told you I was on fire today! Recipe 2, AKA Break #2, Dessert!

Magic!

Ingredients

  • 1 cup heavy cream
  • 3 1/2 ounces dark chocolate, 90% cocoa solids
  • 2 ounces butter
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • Coconut flakes

Instructions

  1. Break the chocolate into small pieces.
  2. Put the cream in a small sauce pan over low heat.
  3. Add the chocolate to the cream and heat the two together until the chocolate has melted.
  4. Add the butter and stir until the mixture thickens.
  5. Stir in the vanilla and almond flour.
  6. Roll the mixture into 24 balls and dip them into coconut flakes.
  7. Put the balls on a plate and refrigerate until hard.

Again, total mental mind shift here. I used to think heavy cream was a bad thing and rarely used it unless I was making a vodka sauce for pasta. I am learning that eating fat doesn’t make you fat, it makes you full and satisfied- but it has to be the right fat! Granted, heavy cream is not the best fat but it is not the worst- so here we go.

This past month of working at my new job has been so educational and eye opening, I have learned so much about my own habits and what I desire to change. I have learned where my weaknesses are and where my strengths are (in sticking with a healthy meal plan) and DESSERT is one of weak points. I am most successful when I let myself eat some chocolate everyday. Mike and I usually split a bar of chocolate after dinner because he is worse than me when it comes to resisting chocolate- seriously for someone with such good self control and awareness, he just LOSES it around chocolate. I love it! ❤

Anyway, back to this recipe- I chose it because I know the key to success is planning ahead. If I had a dessert on hand already made for the week, it wouldn’t be an issue and I wouldn’t want ice cream or some crazy pie or cake and binge when I caved. Added benefit, it’s a recipe from work so I would be able to report back to my members how it went/ if I would recommend it.

As I was making this dish it reminded me of the Oreo balls that my niece, sister and I have made around Christmas for the past two years. Last year we bombed the recipe. We had the hardest time melting the chocolate. That was NOT the case today and I will gladly learn from today’s adventure. The trick was in the chocolate ( I think). I bought “Baker’s” chocolate instead of chocolate chips because I was trying to follow the recipe LOL. And it worked great. I also was much more patient this time around, AND melted the chocolate into the heavy cream. That might have done the trick now that I am thinking about it. Last year we just tried melting the chocolate in a pan on the stove- no bueno!

So this came together easy, warm the cream, melt the chocolate, melt the butter, add the vanilla and almond flour and then roll ’em. It was mess though! But a messy success!

They taste, and have the consistency of, Macaroons! Yummy, yummy in my tummy.
